GRAPE VARIETIES – 100% Nebbiolo
TERRAIN – Clay-limestone.
HARVESTING – By hand in boxes.
VINIFICATION – Destemming and cold maceration for a few days. Vinification in temperature-controlled combined tanks for about a week, with regular pumping-over, punching of the cap and delestage. Post-fermentation maceration for several weeks.
AGEING – 9 months in oak barrels.
COLOR – Garnet red.
PARFUMS – Intense and characteristic of Nebbiolo.
FLAVOR – Well-balanced with a nice roundness and a retro olfaction on fruit and spices.
OPERATING TEMPERATURE – 18 to 20°C.
ALCOHOLIC STRENGTH – 14%
FOOD & WINE Pairings – Ideal with local truffle dishes, red meat and game, soft, washed-rind cheeses.
