GRAPE VARIETIES – Nebbiolo 100% (Cru Castagni, Cru Ravera, Cru Bussia)
TERRAIN – Clay-limestone.
HARVESTING – By hand in boxes.
VINIFICATION – Destemming and cold maceration for a few days. Vinification in temperature-controlled steel vats for 7 to 10 days with regular pumping-over and racking. Separately for the three grape varieties. Post-fermentation maceration for 20 days.
AGEING – 18 months in oak barrels for each grape variety.
COLOR – Garnet red.
PARFUMS – Intense, spicy, with supple, harmonious tannins and hints of red fruit, violet and rose.
FLAVOR – Well-balanced with a nice roundness and a retro olfaction on fruit and spices.
OPERATING TEMPERATURE – 18 to 20°C.
ALCOHOLIC STRENGTH – 14.5%
FOOD & WINE Pairings – Ideal with truffle-based dishes, red meats, game, mature cheeses and also perfect in combination with dry pastries and chocolate.
