GRAPE VARIETIES – 100% Nebbiolo
TERRAIN – Clay-limestone.
VINIFICATION – Crushing, destemming and cold maceration for a few days. Alcoholic fermentation in temperature-controlled steel tanks for about a week. Post-fermentation maceration for 10 to 12 days to obtain the best extraction of aromatic and phenolic substances.
AGEING – 12 months in combined barrels and 6 months in oak barrels.
COLOR – Ruby red with garnet hues that become more obvious with age.
PARFUMS – Fruity with aromas of transformed red fruits.
FLAVOR – Well-balanced with a nice roundness and a fruity aftertaste.
OPERATING TEMPERATURE – 18 to 20°C.
ALCOHOLIC STRENGTH – 14%
FOOD & WINE Pairings – Ideal with roasted or grilled red meats and washed-rind cheeses.
