GRAPE VARIETY – Primitivo 100%
PRODUCTION AREA – Manduria.
VITICULTURE TYPE – Espalier.
HARVEST – End of August.
VINIFICATION – After pressing, the rosé must is sent for primary fermentation, under strict thermodynamic control (13 to 15°C). The transformation of must into wine continues in steel, on fine lees, until the end of October. The wine is then transferred to an autoclave for secondary fermentation, where the second fermentation and subsequent aging on lees take place, for a total period of around 120 days.
REFINING – In stainless steel and in bottle.
COLOR – A lively, intense rosé characterized by fine, elegant beading.
PARFUMS – Good intensity, notes of red berries accompanied by floral notes of rose, bread crust and yeast.
TASTE – Thanks to its pleasant effervescence and excellent acidity, this wine is particularly fresh and lively on the palate, and justly sweet, balanced and fragrant.
SERVING TEMPERATURE – 6-8°C.
ALCOHOLIC STRENGTH – 12.5%
Pairings – Aperitif , fish carpacicio, tuna sashimi.
