GRAPE VARIETY – Fiano di Avellino 100%
CHARACTERISTICS – 4500 vines per hectare, 70 quintals per hectare.
VITICULTURE TYPE – Espalier.
HARVEST – Late September, early October.
VINIFICATION – Static must settling after gentle pressing of crushed and destemmed bunches with a yield of 50%. Inoculated with selected yeasts on the clear, steel fermentation.
REFINING AND STORAGE – At least 6 months in bottle.
COLOR – Bright yellow with soft green highlights.
PARFUMS – Surprisingly fine and elegant, harmonizing with subtle but persistent floral notes of green apple and juniper berries. In the background, a strong mineral impact makes this wine complex and persistent.
FLAVOR – Elegant and rich at the same time, great dynamism between sweet alcoholic sensations and vibrant acidity, long aromatic persistence.
SERVING TEMPERATURE – 14°C.
ALCOHOLIC STRENGTH – 13.5%
FOOD & WINE Pairings – Perfect with raw and/or smoked fish carpaccios, oysters, grilled prawns and soft cheeses.
