VARIETY – Montepulciano 100%
AREA OF PRODUCTION – Vineyards situated in the district of Casalbordino with favourable exposure to the sun.
SOIL – ALTITUDE – Medium mixture, mixed argillaceous at 200 – 250 metres above sea level.
VITICULTURE – Espalier with a density of 3800 – 4500 plants per hectare. Abruzzi pergola with a density of 2000 – 2500 plants per hectare with a production of 90 quintal with yield in wine of hl 60.
HARVEST – The period following the first week in october, reaching the phenolic maturity and selecting the best grapes.
VINIFICATION – Removal of grape stalks and long maceration for about 20-25 days with periodic repassing of must over the grape dregs and in small capacity stainless steel containers with automatic control of the temperature of maceration and fermentation.
REFINEMENT – STORE – Aged about 18 months in hl 25 oak barrels and refined in bottles for three months before being placed on the market. Store in a dry and cool place at a temperature of about 5-7°C.
COLOUR – Intense bright ruby red with light garnet hues.
SCENT – Fragrant, persistent, intense with clear scents of vanilla and mountain berries.
TASTE – Harmonic, full-body, intense with a persistent pleasant taste.
SERVE – Serve at a temperature of 18-20°C opening the bottle at least one hour before consumption.
ALCOHOLIC DEGREE – 13,5%
FOOD AND WINE PAIRINGS – Pasta dishes in red sauce, red meat dishes, game and aged cheese.
